Please can somebody tell me .... from a horizontal position, which way would the screen normally rotate to get to vertical... clockwise or counter-clockwise?

Clockwise usually in a generic JAMMA cab, assuming you're lifting the monitor out from the front of the cab. Just be careful there's enough slack in the monitor cables to allow for the rotation.

if you can only rotate the other direction,you can always flip the yoke wires,or many pcb's allow you to flip the image via dipswitch

Depends if it's a 'classic' or a candy cab I think.
Modern TATE games favour the -anti-clockwise- rotation (hence modern / japanese cabs do this). Classic games seem to go -clockwise-, so woodies and generic jamma cabs tend to do it this way.
