Are atari system 1 rom boards all different (physically ... i.e. any custom chips on them or anthing) or if you had say a marble madness rom board, could it be any system 1 game you want it to be if you swap the roms on it ?

I think there are slapsticks on the romboards, but then you can get around these.

There's 2 different types of rom board. I think the LSI type will play
any game.

Note: if you're looking for one board to play all the games get one of
the ones with speech (eg roadrunner roadblaster indiana jones) - if the
game doesn't use speech (eg marblemadness peterpackrat) the speech chip
sockets will be un-populated.
