Problem Star Wars Trilogy Emulation

I'm in the process of putting together a dedicated Monkey Ball panel with analogue stick for use on my Astro City cab. I have a JVS to Jamma adapter set up for Naomi games.

But it got me thinking about Star Wars Trilogy which i've always wanted to be able play at home but didn't want a dedicated cab.

I'm thinking now I have a panel with analogue stick (albeit a banana!!!) a raspberry pi emulation solution might work? Anyone got any ideas/advice on how to go about it or if its even possible!?
