I've often wondered that myself.

Especially when it's over £25.
The most I ever paid on customs was £75 from Shitty UPS.

I won't use them to send or receive everything again.

Fuck em.

There is only one way to stop paying Import tax and that's stop importing stuff !!!

It does amaze me how they ' Decide ' who pays and who doesn't. I have had a few thing from China be charged and then others that are more expensive not even though both are low value gifts.

As for your question I suppose if its something you want then yeh you need to pay to get it. Or if it goes back to sender get a refund I suppose.

The value was probably marked on the same document that gift was ticked on, the one they've removed. Think you have to state a value somewhere for the parcel's insurance/cover don't you?

For starters. OP should delete / edit the pic of the envelope as doxxing himself is not a good idea.
Secondly there's this myth that labeling something as a 'gift' will exempt it from import fees. Every bloody proxy service offers it and it's not a good idea ticking the box. Stick to the £135 limit when importing and everything is usually golden.

So he might have put £200 for all I know now the docs are gone , I will never know

I've a couple of suppliers that now know to put goods into multiple packages as the postage is cheaper than paying import duty, so will receive several rather than the one biggie, but don't tell anyone :)
